The Scoop
Ayer Coffee Roasters puts it in four words at the top of its own site: thoughtful coffee, crafted matcha. The components are house-made and prepared fresh each day, and the working principle is simple and consistent, and never rushed. The matcha is sourced from Kagoshima and Uji, two of the most renowned growing regions in Japan, which is a wider net than most cafes cast and gives the board real range. The two produce quite different tea, one rounder and one more umami-forward, so a room carrying both is worth an order or two. Ayer was built on a passion for quality and connection, and the company is direct that great drinks and a strong sense of community go together. It has become a genuine local gem in Tustin, holding a 4.7-star rating across nearly 500 reviews, which is a lot of consistency for a room this size. We rate it as one of the more serious matcha rooms in Orange County.
